Chilli chicken burger


4 chicken breast fillets
⅓ cup (80ml) sweet chilli sauce
1 tablespoon lime juice
2 tablespoons chopped coriander (cilantro) leaves
4 buns, toasted and halved
whole-egg mayonnaise, to serve
rocket (arugula) or lettuce leaves, to serve


Flatten the chicken by banging with a rolling pin. Combine the chilli sauce, lime juice and coriander and use to coat both sides of the chicken. Cook in a hot non-stick frying pan over medium heat for 4 minutes each side or until golden and cooked through. Spread the buns with mayonnaise and top with rocket and chicken and sandwich with bun tops
